One of the first things I learned at Burnley was the one-third rule: never remove more than a third of the grass blade in a single cut. Most homeowners, and plenty of mowing contractors, break this rule constantly. The grass gets long, they scalp it back to the dirt, and wonder why it's full of weeds three weeks later. Scalping exposes the soil to sunlight, which is an open invitation for weed germination, and it dries out the root zone right when the grass needs moisture to recover.
